A traditional Southern Cornbread recipe does well in a roasted bird.
Try to keep any exposed stuffing to a bare minimum as it will pick up some smoke. Besides getting the thighs up to 170 or so and making sure the breast doesn't dry out you need to make sure the center of the stuff is at 165.
I have used Max's ice bag trick successfully on a stuffed bird. Stuff the bird, ice down the breast meat and the roast it.
When serving make sure you mix the stuffing well. They'll never notice the hint of smoke till its too late -
I too follow Mad Max icing the breasts. I stuff the bird full and take out about 1 or 2" of the exposed stuffing and put in a separate bowl. That stuffing will have a strong smoke flavor. The rest of the stuffing has a nice flavor.
However, not everyone likes the smoked stuffing so we also do some stove stuffing.

what about a piece of foil over the exposed stuffing? you could also sew it shut, but that always looks faintly medical... cadaver-ish.
i think you could cover the stufing with foil, and yank it off for the last, say, hour, to crisp uped egli avea del cul fatto trombetta -Dante -
