I'm betting it's the overhang from the plate setter, too. Like you, I didn't lack for basting liquid, but the edges where the pan extended beyond the plate setter did get very dark. I rotated the pan 180 degrees in mid-cook so they didn't burn black.

Could Hare's problem be probe placement?
