AuntieEgger,for turkey wings, i like to brush some melted butter on them, then some rub (dizzy raging river/tsunami spin/shaking the tree all work well .. . jamaican firewalk if you want them hotter) .. . then onto a raised grid indirect at 350 degrees for about an hour or so until done. .. .really really tasty. . turkey thighs, i like to d-bone them (very easy to do), stuff them with either a mushroom pancetta mixture, or something like prociutto and parmesan cheese, tie them up, brush them with melted butter, salt and pepper, then roast them at around 450 degrees in a pan for about 45 minutes to an hour until done, then make a pan gravy with the drippings (add a little flour/white wine/chicken broth). ...
