Morning All:

Just got up to check on the four butts that have been on since 11:15pm last night. The two that I have an ET73 probe in are at 166 & 167 and the one with guru probe is probably in the same temp area.

I had wanted to start these earlier than 11 last night but ended up having to drive to and then back from Tallahassee yesterday (4 hours each way) so we didn't get home until 10:00pm. I quickly loaded up one of the Large Eggs with part of my last bag of Wicked Good. While the Egg was warming up, pulled the butts out of the fridge and prepped them (slight trimming and covering with rub), such that in less than an hour had all four squeezed on (32 pounds total) so off to bed I went.

Now I'm shooting for them coming off between 12 and 1 so we can pull the meat and be at party by 4:00pm.

One last look from the side (tjv I need to get one of your adjustable rigs as this was tough to get arranged so that the dome would shut).

In the upper left hand corner of this pic it looks like a "smoke angel" keeping a watch on how the butts are doing?

That looks great! That's a lot of meat for one cook. Those folks at the party are in for a treat. In the past, when I've had to alot of meat to cook like you do, I also had trouble with the dome closing. I took the top picnics and leaned them on each other like a flat teepee. I noticed no discernable change in cooking time. I did have to watch my dome thermometer though, it was touching the meat. But it certainly seems that you have got that covered. Are you going to wait to pull it at the party? There's something about the appreciation of folks seeing you reach in and pull out the bone by hand. I've probley helped to sell 5 or 6 eggs that way. Morning Big'un:

Actually this isn't for the party we are going to this afternoon (though I may take some along). We are going on vacation the last week of September and I wanted to take some pulled pork along and knew I didn't a weekend available between now and then to do an overnight cook. Plus to me it only makes sense to cook four at a time (that is what the foodsaver is for).
