Rascal WessB, I dunno... I have 2 shoulders and one butt (well, 2 halves) and last I checked, they all had
skin..... Sorry, I couldn't resist! 8 - )

The shoulder cooks pretty much the same as the butt. If you want bark and more smoke flavor, cut
off the skin and rub up as you would the butt. If you don't, leave the skin on or score it and
the shoulder will still turn out very good bbq.
