OK, so pizza isn't as easy as it looks....I made all the newbie mistakes I'm sure. Started out with frozen store bought dough. Decided to make one pizza so I let it defrost overnight in the fridge and it was fine when I fired up Fat Man. Assembled the pieces of that one on a cookie sheet (no peel yet) and decided it was not enough for the 2 of us....so I thought I would defrost the other frozen dough in the microwave.Tip #1. This is a bad idea...duh! The dough doesn't warm up evenly and I wound up with spots that were....shall we say a little firmer than others. Also the dough wouldn't stretch very far so....calzones were born!When I went to transfer the pizza to the parchment paper it was stuck fast to the cookie sheet, even though I used liberal amounts of corn meal on it. Trying to move it was sure to cause a tear in my first masterpiece. Then wifey came to the rescue with a great idea!Tip #2. Wifey said put the pizza on the cookie sheet into the freezer to let it firm up. 15 minutes in zero degrees and that thing just flew off the cookie sheet and onto the parchment paper like it wanted to hop on Fat Man by itself!550 degrees for 12 minutes and they were done. Some of the best tasting pizza we have ever had...and not bad looking either. 1/2 was onion, bacon bits and mushroom. The other half was chicken and baby carrots....same for the calzones. Here are the results.
