spatchcocked chicken [2], grilled asparagus, long grain and wild rice. pile the rice in the center of large platter, put chicken pieces on top [pour the chicken juices, not the fat] over the rice] arrange the asparagus around the edge. candles, champagne. grilled pineapple for desert, if you want to go back to the egg.
grill the asparagus while the chicken is resting. if you do not have a thermopen get one so the chicken comes off when it is done, it can rest under foil.

Trex a Tri-Tip and grilled Romaine Lettuce Get the Egg up to 600* Sear each side for 90 sec. then close the vents top and bottom close the top turn in 5min. check internal temp. You'll be looking for 132& for rear. Take the steak off the grill cover with foil put the Romaine that you have sprinkled with Italian dressing cut side down 90sec. plate and serve with some cheese.

WW, I would go with Prime Rib! Very, very easy to cook and always a winner on the BGE!! 8 people, depending on appetites and sides, 8 - 10lb. PR will do the job!
