Is this something I want to do a "T-Rex" thing....sear & roast? anyone have any thoughts on temps & times? many thank to one and all.

untie them and trex them flat, sometimes you need to make a cut so they lay open butterfly style and trex, finish temps less than 125 keeping it on the rare side. i usually cut them apart for a second meal, maybe kabobs, stews,or ground up for pies or something later.
