i can't remember who did it?? .RTD?? ...i remember some great pics of diced sweet potatos and either squash or zuchini in a wok in the egg. ... i might want to try it this weekend as a thanksgiving option on the sweet potatoes. .. .thanks in advancemax
Morning mad max beyond eggdome:Would this be what you are looking for?We do these all the time. Basically cube up the butternut squash and sweet potato (make the squash cubes slightly larger as they cook faster). Put in a ziplock bag with some EVOO and your favorite spices (DP Shakin the Tree very good!). Let set at least an hour then cook in the wok until veggies are soft. SSN686, DATS DA ONE!! . . .do you put oil in the pan? ... some butter? ...anything to sweeten it up (i know the yams will give off a lot of their own sugars to carmelize)....about how long? ....think i'm gonna do a trial run this weekend on this one. ..THANKS JAY!!p.s. does this one have a name? :-)
Morning mad max beyond eggdome:No name (yet). I don't add any oil, butter or anything to the pan. There is usually enough oil on the veggies and/or in the bag when I dump it into the wok (though you could easy add some if desired). I would guess cooking time is 10 to 15 minutes depending on how hot the fire. I usually put the wok (mine is cast iron) in to let it heat up before adding the veggies. I don't add the veggies until the dome temp is 350+ for a few minutes. Normally I am fighting the flames to some extent while cooking, but I do close the dome between "stirrings" of the veggies.
