Just got a large green egg this summer and am going to try to smoke a turkey...15-20lbs....for Thanksgiving. Have family coming from Ohio and need to impress. So, was wondering at about what temperature and for how long should I plan to smoke this bird? Any kind of rub on the outside? Rub down with olive oil? Thanks.
Tim Siders, Doing a 22lb for my neighbor tomorrow while my brother-in-law takes care of the family bird figuring to be about 4 1/2 hrs. I usually stick to the mad max setup and basting instructions but we stuff ours. Never had any problems with smoke. Best of luck start the egg a good 45 minutes before the bird goes on, just to get it up to temp and burning clean. Lots of lump and you will be fine, post if you have questions.
Tim Siders, Can't help you. My family won't let me smoke turkeys any more since I started cajun style frying turkeys several years ago. I brine, inject with cajun seasoning, and fry and the turkeys come out unbelievable. I suggest you smoke a ham and fry a turkey! I have yet to serve a fried turkey that people weren't delighted with the results. I've even got neighbors bringing the turkeys to me.
