I've only done 1 butt before and don't remember anything about the skin.. Do you leave it on cut it off?? I have read some recipe's but don't see anything about the skin??? Thanks in advance.. Hope to see all of you in ATLANTA
popedaddy, skin? I assume you mean fat cap - just leave it on - it will render during the long cook and enhance the meat. As for me I always place the butt so the fat cap is on top.
popedaddy,The shoulder cooks pretty much the same as the butt. If you want bark and more smoke flavor, cut off the skin and rub up as you would the butt. If you don't, leave the skin on or score it and the shoulder will still turn out very good bbq.john
