Just Plain Mike,(1) It's hard to say when it will be done as no two pieces of meat are the same. I'd guess that you'll be coming out soon but that's a guess based on past experience and once coming out it'll finish off pretty quick. That being said you could raise the temp which will speed up the process if it get to late.(2) I pull my butts at 195 wrap in foil and then in towels into an ICE chest (with no ICE) for a couple of hours. Then unwrap and pull.
