Mark Smith,If the grouper is really, really, fresh, has been filleted, and skin removed, it will tend to fall apart on the grill, you may need a basket to hold it.With fresh grouper, my favorite way is salt and pepper and lots of melted butter brushed on, grill it till its done, flip only once.Pete-Tampa
