How much chicken for Pulled Chicken? (4 adults, 1 child)

All,

So I'm going to attempt pulled chicken for the first time this Friday night and have two buddies coming over to see the BGE in action. The reason for pulled chicken is that the wife has been demanding it and wants a temporary pork break. GASP!

I want to make enough for me and my buddies and make sure that I have enough for leftovers, the original intent was for my wife to have some frozen away for lunch and stuff.

I've been reading and have found that most recipes suggest using "whole chicken legs" or "leg quarters". Basically leg plus thigh, minus the backbone. The wife also wants some breats thrown in there also.

I'm assuming 350 dome temp with a indirect setup and a drip pan underneath, should reach at least an internal temp of 180 or should I go higher?

So how much chicken should I get, what should be my internal temp and does anyone have a tasty, tasty recipe they are willing to share?

I knew I forgot to ask something else, about roughly how long would one expect the chicken to take to cook?

195-200 is more like it for pulled chicken, and go with thighs or leg quarters. -RP

never made it, and dont remember seeing it here, ive seen it posted on the bbqforum. i would think 2 eight packs of thighs cooked about 250 for 1.5 to 2 hours on a raised grill direct would be plenty for leftovers. dont fill the lump much over the holes to maximize distance between the food and fire and dont worry about a drip pan as its not needed with this setup. thighs will get up to about 190 internal and the skin will start to crunch up, remove it and add after you pull/chop it and sauce for some crunch in the sandwich. up here a pulled bbq chicken is pressure cooked, pulled, served with mayo and lettice, much different than what ive seen posted.

OMG, where is up here? I can't imagine having a pulled chicken sandwhich with lettuce and mayo. Where I come from , that pulled chicken is dripping in some type of vinegar or bbq sauce and thrown on a bun. Served up with some garlic bread, french fries, green beans or what have you.

Just kidding with you, but I truly have never heard of pulled chicken like that.

i think its a very small regional thing up in the merrimac river valley of massachusetts and doesnt exist elsewhere. we used to have small lunch shacks that served the mills and everyplace served a chicken barb sandwhich. the chicken was kept in hot broth and squeezed between slotted spoons then onto a hamburg bun. cheap inexpensive sandwiches. fast food places have put almost all the shacks out of business as much as the closing of those mills over the years. while not bbq, they are good and better for you than what the fastfood places are now serving. i remember a story from way back when the river had salmon and the old mills were canneries, the first union moved in and the number one thing they did for the workers was to force the canneries to make lunch from something other than salmon one day a week which was were the chicken barb was born.
