Darnoc,

I don't hold them in the fridge. I brine my shrimp for about 10 minutes then rinse, roll in seasoned flour, dip in egg wash and a light coating of panko, not pressing it in. I try to fry within 10 minutes or less. I do fry in small batches. Usually they take around 4 minutes total cook time. Some fried oysters will sure go good with the shrimp.
