I think I'm in need of some professional help. I woke up this morning and my mind was busy with thoughts of what to cook (on the egg) ... and wouldn't you know it, I has some maple sausage just asking to be introduced to the large egg.Well, to make a long story short, my wife got up maybe a half an hour after I started to make a fattie and said "I know you are cooking tonight, but you kinda smell like smoke already".Now the part about professional help. I think I'm addicted fatties and egged food in general (this has been going for 9 years and seems to be getting worse). Are there 12 steps or forget about t, keep coking and accept that there are things out of our control!?Smokey
Smokey, I got up at 5:30AM for similiar reasons; I have some sourdough that has been going for 20 hours so far and I needed to add another cup of flour to feed it this morning. It goes on the egg for dinner tonight. Wonder if there is an "Eggs Anonymous" group?

Fidel, ya mon! hahahaha it's kinda funny how i am inspiring people. most of what i do is easy, quick stuff. it doesn't have to be a long, complicated recipe with 87 ingredients to be good. all you need is an egg and salt & pepper!i left off the part about serving the smoked fattie boat eggs with pace mild salsa and or bob evans sausage gravy, both optional. and if your cast iron skillet is not well seasoned, you might have a sticking issue so just go around with a plastic spatula and unstick it a few times during the cook.and this IS eggs anonymous! the meetings are on tuesday!
Rick's Tropical Delight,Sticking not a problem here bro. This pan is a family hand-me-down...probably close to 50 years old if not more.I was way ahead of you on the salsa front. I always eat eggs with salsa.
Smoke2much,I grew up in the bay area and good sourdough is hard to find (in Atlanta). What they have at the grocery store isn't bad, but what I remember eating was "Wonderful". Enjoy dinner tonight!Smokey
