ping- ricks tropical delight- ijd, hey! i think you are referring to this one. i kinda just made that one up as i went, but i found it in the archives and here it is:here's what i did...Rick's Tropical Delight BBQ Fruit ___________________________________ 3 pineapple rings 2 + 1 tablespoons brown sugar 2-3 tablespoons unsalted butter 2-3 tablespoons honey 6 strawberries, 3 whole, 3 sliced 1 banana, sliced on angle ___________________________________- grill pineapple rings over direct medium 350 dome fire just enough to get some grid marks and soften a bit, 3-4 minutes each side. sprinkle 2 tablespoons of brown sugar on the pineapple rings - melt butter in cast iron skillet. add pineapple, banana, strawberries. drizzle honey over all. sprinkle 1 tablespoon brown sugar over all. make sure the bananas are not sticking by moving slightly. - when it looks good and you can't stand it anymore, take off fire and let cool. do not burn your tongue!would be fantastic over ice cream!
Rick's Tropical Delight, this would be beautiful flambeed with a dash of brandy, or Grand Marnier, before serving, and would make a nice addition for TNW's unusual recipes post. Looks fabulous!!! Roger
irishrog, i didn't have any flambe' juice that night, or i would have. hehehi've done several bananas foster cook sometimes with 151 rum and sometimes with calvados apple brandy
Rick's Tropical Delight, it's lunch time now here in Ireland, so I can allow myself think about flambeed bananas with rum with some Mexican vanilla extract added. How soon does the weekend start, I think I can feel an experiment coming on. Roger
