Hey any and everyone! Have not attempted to smoke a turkey but want to in a couple of weekends. Do I need the vertical thingie to put my turkey on ..and then place the turkey in a drip pan? Also, how long per pounds do I cook it..and at what temperature to smoke it? Thanks so much for your help. Looking forward to attending my first EGG cookout in Georgia during the month of October! Can hardly wait!!
AlaskanC, Hey..wanted to say I read the info for Mad Max. If I understand it correctly..I need to get something ..like a pie plate to put under the grill inside..place it between the coals and grid? ..and I keep it filled with water? Maybe I need to read it again! Just getting too excited about smoking a turkey! If you feel like emailing my AOL address to offer suggestions..please do! Thank you
Ann, Well I am really hoping that someone else will step in here to help, because I suck at describing things! First, do you have a plate setter? You can see it in "The Egg Setup" part of the MadMax instructions. If so, then all you need is a baking/ roasting pan that your turkey can fit in. You want to have your turkey sitting on a rack (I use a little cookie cooling rack) inside your roasting/ baking pan to keep it out of the liquids that you will add to the pan. (white wine in the MadMax method) Look over the instructions a bit and I think it will all come together for you.Be sure to make the gravy as described - you will be in turkey gravy nirvana!!
Ann, here's my setup in my medium egg. three spacers (old butter knifes) between the pan and the plate setter, turkey resting on a bed of carrots and celery stalks in the pan.don't forget to ice the breast!
Rick's Tropical Delight, Wow..Rick..what a tropical paradise looking big bird! Thank you so much for explaining the set up to me! Will purchase me a plate tonight on line! And I know I must have some things in the garage to use for the cross through flow to pervent things for scortching! Again,,thank you!
Ann, Thanks for all the post. I do something similar to what he is doing with the gravy. But now I can't wait to try in on the egg. It come's out so rich in flavor that you will never want to go any where else for turkey dinner again. Pork Butt Mike
Pork Butt Mike, Can hardly wait to smoke my turkey and make the gravy. Sounds and looks grand! There is one thing for sure..I am a happy camper in the Carolina's since I purchased my BIG GREEN EGG and found this forum! Thank you and thanks to everyone else that is helping to share ideas with me! Ann
AlaskanC, your instructions were perfect! Can see it clearly and can hardly wait to fire up the EGG! Getting ready to order me a plate setter now! Can hardly wait to taste the gravy! Buying my EGG and signing up on the egg forum was a grand thing to do!
Ann, hey, if you have a large, you'll have more headroom and you might be able to place the bird on the grid on the plate setter. test your setup with the bird in the wrapper to make sure it all fits. watch your dome thermometer stem, as you may have to raise it some with a spacer to prevent it from sticking in the turkey. just take it out, then close the dome and insert the thermometer back in the hole to see if it hits the turkey.you are gonna love it!
Rick's Tropical Delight, Thank you for telling me to check the thermometer stem! It is best to check up front for sure! I have a large EGG but if I need a spacer, where would I purchase one? Thank you Rick! I really appreciate your help and ideas! Ann
Ann, i use a couple of large stainless steel nuts as spacers for my dome thermometer. others use a short piece of pipe. you only want to raise it about half the length of the stem at the most. you could just use some aluminum foil balled up around the stem if you had to. aluminium foil balls will work for the spacer between the plate setter and the pan as well; some people use three elbows of copper pipe as spaces.
Rick's Tropical Delight, Rick I missed alot of what you were telling Ann. Why ice the breast of the turkey? Do you put the bag of ice in the grill or just cool down the breast? Also what with checking the dome temp gauge? As you can see i'm a newbie and want to learn all i can using the BGE Thanks Jack
