Party Ribs issue
Followed the directions for Meat Church’s Cajun Party Ribs. His were done in 2 hours. Mine… 275 (Flame Boss) indirect were temping (Thermopen) at 158 after 4 hours🫤 I’m at a complete loss to explain this. Any thoughts or suggestions would be greatly appreciated.

What is best replacement gasket?
I see all sorts online. Some are self adhesive and require a seal on lid and 'egg'..... I see a couple different materials. One, the 'Rutledge' is only used on one side and you use some kind of hi-temp gasket seal. I'm officially bewildered.....
